Eierschwammerlgulasch (Chanterelle Goulash): A Taste of Austrian Autumn

  Ingredients: 500g chanterelle mushrooms, cleaned and sliced 2 tbsp vegetable oil 1 large onion, chopped 2 cloves garlic, minced 1 tbsp Hungarian paprika 1 tsp ground cumin 1/2 tsp dried thyme 1 bay leaf 400g beef stew meat, cut into bite-sized pieces 400ml beef broth 100ml red wine (optional) 1 tbsp tomato paste 1 tbsp soy sauce Salt and freshly ground black pepper to taste Chopped fresh parsley, for garnish (optional) Sour cream or yogurt, for serving (optional) Instructions: Sauté the Aromatics: Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Stir in the garlic and cook for an additional minute until fragrant.
